Smoked Rosemary Shepherd’s Pie Recipe
We at Abraham’s love simple, delicious recipes... and this one is simple, and it is absolutely delicious! I mean, who's trying to buy a couple dozen ingredients to make one meal?! No thanks! Also, below, we have given you a few simple substitutions to make it keto-friendly, if you want a low-carb option. This one is the perfect vessel to be finished with our Smoked Rosemary Salt. It truly elevates this recipe. Enjoy!
Smoked Rosemary Shepherd’s Pie
Ingredients needed :
Ground beef or turkey… or lamb : Traditionally shepherd’s pie was made with ground lamb, but we have always used ground beef.
Tomato paste : Canned tomato paste is a good item to always have on hand for this kind of thing.
Vegetables : We generally stick to frozen peas and carrots, but you can add them fresh, as well as onion or celery or toss whatever vegetables you want in it. Or you can cut them out for the keto-friendly version.
Potatoes or frozen cauliflower : We use russet potatoes or frozen cauliflower, if you want to go low-carb with it.
Cheese : If it melts, almost any cheese will do. We use Monterey Jack or Cheddar.
Abraham’s Smoked Rosemary Salt : It’s just not the same without it. That’s why we’re here.
Directions :
Make mashed potatoes or cauliflower :
Peel 4 or 5 potatoes OR use 1 or 2 bags of frozen cauliflower.
Cut potatoes into quarters or chunks
Place peeled potatoes into pot with water and boil them for 12 – 15 minutes, or until they are fork tender. NOTE: If using frozen cauliflower, steam each bag in the microwave for 5 or 6 minutes, or until soft enough to mash.
Drain excess water, if using potatoes.
Add milk (or cream, or sour cream) and butter slowly while you mash with hand masher (or blend with a submersion blender), until they reach your desired consistency. More milk/cream/sour cream will yield a fluffier mash.
Cook the meat and veggies :
While your potatoes are boiling, cook the ground beef in a bit of olive oil and add some Abraham's Smoked Steak Seasoning and/or Smoked Rosemary Salt.
Once the beef is cooked, toss in tomato paste and frozen vegetables
Bring beef and vegetables back up to heat
Spread mixture evenly in the bottom of a casserole dish.
Add the mash :
Spread the mashed potatoes (or cauliflower mash) evenly over meat and vegetables.
Grate cheese over the top and broil on the top rack of oven until cheese is melted, or golden brown, if you like toasty cheese.
Top it with Smoked Rosemary Salt and EAT! :
Serve immediately... and, of course, finish it with Abraham's Smoked Rosemary Salt. If topped with our famous SRS, the smoky rosemary-filled aroma hits hard with each bite, as you are able to get the “nose” (aroma) on the front end, as well as enjoy the complexity of flavor with every mouthful.
As mentioned above, this dish can be easily made as a keto-friendly (low-carb) dish, if the peas and carrots are cut out and the potatoes are replaced with cauliflower mash. I have made it every different way, and I have to say that the cauliflower mash does NOT disappoint… and I, like Mr. Gamgee, love potatoes—boil ‘em, mash ‘em, stick ‘em in a stew.
