One of our favorite things about the smoking process is watching the beautiful snow-white salt become visibly darker, as it’s inundated with rich smoke flavor and aroma. Then we stir it and watch it happen again. This is also one reason we landed on a medium-sized salt flake—it has the perfect amount of surface area to saturate with smoky goodness.
